We perfected the recipe with one key move that I really don't want you to skip: Sear the chicken before you toss into the slow-cooker. Why? Because no one wants soggy chicken, which is what you get when you don't get a nice browning going on your chicken. In the slow-cooker, moisture helps cook the food, while it won't dry out the meat, it definitely won't sear it.

To bulk up the meal, we added baby red potatoes to the mix, which get perfectly tender (and sop up all the delicious chicken juices). You'll toss the tots and chicken in a mixture of herbs, garlic, and spices, and then let it cook all day before garnishing with Parmesan and chopped parsley.
